UPSIDE DOWN APPLE PIE WITH CARAMEL SAUCE

UPSIDE DOWN APPLE PIE WITH CARAMEL SAUCE

Ingredients

 

  • 5 big sweet apples
  • 100g butter
  • 100g sugar
  • Puff pastry

FOR THE SAUCE
  • 125g cream
  • 125g sugar
  • 60g butter

1. Peel the apples, cut them in half and remove the cores. In an ovenproof dish (around 20 cm diameter) melt the butter together with the sugar until it begins to caramelize. Then add the apples, cut sides up, prick the puff pastry with a fork and cover the apples with it. Bake in a pre-heated oven at 190° C for around 25 minutes. When baked allow to cool and flip it over so the pastry is on the bottom.

2. Prepare the caramel sauce. Cook the melted sugar until it turns amber in colour, then add the butter at room temperature. Stir well and bring it to a boil, then pour over the cream and simmer until the sauce is caramelized.

3. Allow the baked pie to cool. Serve with caramel sauce and, if desired, vanilla or other flavoured ice-cream.
