Ingredients
- 3 egg yolks
- 120g cream
- 50g icing sugar
- 5g gelatine
- 100g mascarpone cheese
- 3g vanilla sugar
- Your favourite berries which are not sweet
- Various sprouts
- Nuts

1. Soak the gelatine in a bowl with a little bit of water. Beat together the egg yolks and sugar until fluffy. Whip the cream. Add the mascarpone cheese to the egg yolk mixture and whisk well. Pour the dissolved gelatine in and fold the whipped cream in gently.
2. Spoon the cream into bowls or glasses and place in the refrigerator for a short time until it sets. Garnish with your favourite berries, nuts, various sprouts and sprinkle some vanilla sugar on top.
