Ingredients
- 200g goat cheese
- Vanilla ice cream
- Celery sprouts
FOR THE APPLE PUREE
- 400g apples
- 50g butter
- 25g brown sugar
- 50ml cream
FOR THE CRUMBS
- 80g “Selga” biscuits
- 10g sugar
- 20g butter
- 25g oatmeal
FOR THE APPLE CRISPS
- 2-3 apples
1. Prepare the apple puree. Wash the apples and cut into small cubes. Then put them into a pot with sugar and butter and heat until the water from the apples evaporates and they begin to caramelize. Pour the cream in and bring it to a boil, then blend with a blender. Keep the puree warm.
2. Make the vanilla crumbs. Crush the biscuits into fine crumbs, add the sugar and butter and bake in an oven at 180 °C for around 15 minutes, stirring every 5 minutes. Allow the baked crumbs to cool, then stir in the toasted oatmeal.
3. Prepare apple crisps. Peel the apples and remove the core. Boil a syrup with equal parts of water and sugar, then allow to cool. Cut the apples into small discs, dip into the syrup and place on baking paper. Dry the prepared apples in a pre-heated oven at 80 °C for around 2-2.5 hours.
4. Place the goat cheese on a plate, pour the warm apple purée on the side, sprinkle the biscuit crumbs over the top and relish with apple crisps, and ice cream, if desired.
