Appetizer with fried goat cheese

This is a very easy to make appetizer. The pickled onions with anise and cinnamon add an unexpected and delicious flavour to your appetizer. You can also use the pickled onions as a relish with other dishes as well. Once the onions are done, toast the slices of baguette with the goat’s cheese in the oven. The appetizer will be almost ready to enjoy.


  • 1 whole French baguette
  • 180 g round of goat’s cheese
  • A handful of baby spinach
  • Olive oil
  • 1 ripe avocado


  • 3 medium red onions
  • 100 ml water
  • 70 ml balsamic vinegar
  • 4 star anises
  • 2 cinnamon sticks
  • 4 tablespoon sugar
  • A few bay leaves
  • Pepper and salt


1. Prepare the pickled onions with anise and cinnamon one day in advance, or at least two hours before your guests arrive. Cut the onion into big slices (cut the onion in half first and then slice into 6 smaller pieces). Boil the water along with the balsamic vinegar in a separate pot. Season with a pinch of salt and pepper. Add the star anises, cinnamon sticks and bay leaves. After the water has boiled, pour it over the sliced onions. Cover with the food film and leave it for one day, or at the very least for a few hours, in the refrigerator.

2. Preheat the oven to 180°C. Cut baguette in half lengthwise and break it into 3–4 smaller pieces. Cut the goat’s cheese to even 0.5 cm slices and arrange them on top of each slice of bread. Drizzle with olive oil and grill them in the oven for about 10 minutes.

3. Once your bruschette are ready, place them on the plate and put a healthy dollop of the pickled onion relish on top of each one. You can make your appetizer even more delicious by adding baby spinach or other greens. Sprinkle with salt and pepper.

4. Serve with avocado slices coated in the crushed salt and pepper mixture.

If you have not had time to prepare the pickled onions one day in advance, you can make them more quickly by boiling the onion in a water for a short time. This helps to pickle the onions faster.
