These unusual pancakes are made from pâte à choux and they are a great choice for the Shrove Tuesday. Enjoy them with your favourite toppings or make a special pancake layer cake.
Ingredients
- 6 eggs
- 6 cups butter milk
- 6 ½ cups wheat flour
- 3 cups boiling milk
- 2 teaspoons soda
- 2 tablespoons sugar
- Pinch of salt
- ½ cups oil
- *1 cup = 225 ml
1. In a large bowl beat the eggs, butter milk, sugar and flour with a whisk or electric mixer. Whisk until the mixture is smooth and there are no more lumps.
2. In a saucepan pour the milk and bring it to the boil, then add the soda. While the milk is still frothy and hot, pour it over the batter and mix well. Season with salt, add the oil and mix up well.
3. Heat the skillet until very hot and fry the crepes (you don’t need to grease the skillet as there is some oil in the pancake batter).
4. Enjoy your pancakes with various cheeses or sweet toppings. For example, salty caramel and fresh strawberries (or raspberries), Greek yogurt and honey or fresh pears and maple syrup.
