Chocolate brownie with ice cream

This moist chocolate brownie with fresh mint sauce, ice cream and berries is the perfect finale to a great evening with friends. Just be careful though – it is so delicious you might bite your tongue.

Ingredients

FOR THE CHOCOLATE BROWNIE
  • 100g chocolate
  • 120g butter
  • 200g sugar
  • ¼ teaspoon salt
  • ½ teaspoon baking powder
  • 2 big eggs
  • 90g flour
  • Ice cream

 

FOR THE MINT SAUCE
  • 50ml fresh squeezed lemon juice
  • 20ml lime juice
  • 15g mint leaves
  • 60g honey
  • 40g brown sugar
  • 40g olive oil
  •

1. Prepare the brownie. Combine the flour, salt and baking powder. Melt the chocolate along with the butter over a saucepan of hot water and add the sugar. Mix everything well and let it cool to room temperature. Whisk the eggs with an electric whisk then gradually whisk in the chocolate mixture. Add the flour combined with the salt and baking powder then mix until well blended. Pre-heat the oven to 175º C. Line the baking tin with parchment paper then spoon in the batter and spread smoothly. Bake the brownie for 20-25 minutes.

2. Place the mint leaves together with the lemon and lime juices into a blender. Add the honey, sugar and oil then blend everything together until well combined.

3. Cool down the baked brownie and serve it with the mint sauce and a spoon of vanilla ice cream. You can also garnish it with a handful of fresh berries and a few fresh mint leaves.
