SAVOURY GOAT’S CHEESE PIE

Everyone who hasn’t a sweet tooth will love this “dessert”. Goat’s cheese tart with caramelised onions, chilli or vegetable sprouts – you can choose your favourite topping and surprise your friends. By the way, this pie can be served as a starter.

Ingredients

FOR THE PIE CRUST
  • 150 g black bread
  • 50 g melted butter
  • 20 g seeds and nuts

FOR THE PIE
  • 350g goat’s cheese
  • 2 tablespoons sugar
  • 300ml heavy cream
  • 2 big eggs

 

FOR THE CARAMELISED ONIONS
  • 4 medium red onions
  • 1 tablespoon butter
  • 3-4 tablespoons balsamic vinegar
  • Pinch of salt, pepper and sugar

 

FOR THE TOPPING
  • Chilli
  • Vegetable sprouts
  • Bread crumbs

1. Make the pie crust. Grind the black bread along with seeds or nuts into the crumbs. If your bread is already with whole grains, seeds or nuts, you don’t have to add extra. Mix the bread crumbs together with melted butter until smooth. Spoon the dough into the mold (or a few smaller molds) and press into the bottom evenly. The crust should be around 1cm thick.

2. Mix the goat’s cheese, sugar, heavy cream and eggs until smooth. Pour the cheese mixture into the mold over the bread crust and bake in the oven at 100-1100 C for around 1 hour.

3. Whilst the pie is baking, prepare the onions. Cut them into half rings and fry in the melted butter on a low heat (be careful not to burn them) until completely softened. Then slightly increase the heat and pour over the balsamic vinegar and season with the salt and pepper. After the balsamic vinegar evaporates, taste the onions. If they are too acidic, add a pinch of sugar.

4. After the pie is baked, remove from the oven and let it cool. Serve with the caramelised onions. In addition, you can garnish with the chilli, bread crumbs or the leek, garlic and radish sprouts.

You will get the best result if you use goat’s cheese cream.
