Carrot cake with ice cream

The unusual quince sorbet and cream cheese give this cake a very nice freshness. You can decorate the cake with easy-to-make, yet very delicious, marinated raisins.

Ingredients

FOR THE CARROT CAKE
  • 110g brown sugar
  • 110g white sugar
  • 1 egg
  • 1 egg yolk
  • 110g carrot puree for babies
  • 250g finely grated carrots
  • 10g vanilla sugar
  • 100ml various nuts or seeds oil (eg., hazelnuts, pumpkin seeds or sesame seeds oil)

FOR THE ICE CREAM
  • 500ml quince juice or diluted quince syrup
  • 150 g sugar
  • 4 g gelatine

FOR THE MARINATED RAISINS
  • 50 g golden raisins
  • 2 tablespoons honey
  • 100 ml water
  • 2 lemon juice

 

FOR THE CREAM CHEESE
  • 100 g “Philadelphia” cheese
  • 30 g sugar
  • ½ lemon juice

1. Make the cake. Whisk well the brown sugar, egg, one egg white and carrot puree with a beater. Add the grated carrots, vanilla sugar and oil and whisk together until well combined, then add the flour and mix until incorporated. Line the baking tin with parchment paper and bake the cake in the oven at 175º C for 40 minutes. When the cake is done, allow it to cool.

2. Prepare the ice cream. Stir together the juice and sugar until the sugar dissolves. Sprinkle gelatine into the cold water and allow it to soften, then heat the softened gelatine until it melts. Pour the melted gelatine into the juice and stir well. Pour the mixture into a freezer-safe container and place it in the freezer. Lightly crush frozen the mixture with a knife, then put it into a food processor and blend until sorbet consistency.

3. Marinate the raisins. Place all of the required ingredients along with the raisins into a saucepan and bring to the boil. Allow the mixture to cool down and then let the raisins soak.

4. Make the cream cheese. Simply whip all of the ingredients together with a whisker.

5. Serve the dessert. Cut a slice of carrot cake and place some ice cream and cheese cream on the side. Sprinkle the marinated raisins on top.

You can replace nuts or seed oil with good olive oil.

Instead of quince ice cream you can try normal vanilla ice cream.
