The incredible and unique scent of black truffle, rosemary and lime enriches this cocktail with amazing flavours.

Ingredients

FOR THE COCTAIL
  • 200 ml good bourbon
  • 4 lime juice
  • Ice cubes

FOR THE ROSEMARY SYRUP
  • 250 g brown sugar
  • 500 ml water
  • 50 g rosemary sprigs

FOR THE FOAM
  • 2 egg whites
  • 1 lemon juice
  • 1 teaspoon black truffle oil
  • 2 tablespoon sugar

1. Prepare the rosemary syrup. Put all of the syrup ingredients into a saucepan, bring it to the boil and then place aside to cool down. Strain the mixture.

2. Pour the bourbon, lime juice, ice cubes and rosemary syrup into a cocktail mixer and shake well. Fill a whiskey glass with ice and pour the drink into the glass.

3. Make the foam. Whisk the egg whites along with the lemon juice, black truffle oil and sugar until stiff. Place a tablespoon of foam on the top of the cocktail.

You can find pasteurized egg whites in conventional supermarkets or specialized food stores.
