  • 3 egg yolks
  • 100g sugar
  • 180ml milk
  • 120ml heavy cream
  • 1 vanilla pod
  • Nutmeg
  • Cinnamon
  • 1 tablespoon rum

1. In a bowl, add the egg yolks and sugar. Beat until a smooth creamy consistency.

2. In a small saucepan, pour the cream and milk in. Cut the vanilla pod lengthwise and remove the seeds. Place them and the vanilla pod into a saucepan, pour the rum in. Heat on a low heat for about 2-3 minutes but don’t bring it to a boil.

3. In a bowl with the egg yolks, pour the warm milk and cream mixture in. Stir well and pour back into the saucepan. Grate in some nutmeg, sprinkle in some cinnamon, according to your taste, and cook on a low heat for about 5 minutes until it reaches a temperature of 90° C. Cool the drink down and pour into a jar or bottle and place in the refrigerator.

4. Serve like a cocktail in the glasses with straws. Grated chocolate or chopped melted sugar will add some extra flavour.
