Wine dessert


  • 325ml red wine
  • 2 tangerine wedges
  • Star anise
  • Juniper berries
  • 20g sugar
  • 175ml heavy cream (35% fat)
  • Lyophilized peas
  • Black truffle

1. In a pot add the wine, tangerines, star anise, juniper berries and sugar. Bring the mixture to a boil, wait until it begins to shimmer and allow to rest to infuse the aroma and flavours. Strain and allow to cool.

2. Pour the wine into a siphon with heavy cream and place it in a cool place. Spread the wine dessert into a bowl. Garnish with the lyophilized peas and black truffle shavings.
