Ingredients

  • 4 slices of brioche buns
  • 200ml heavy cream
  • 100ml milk
  • 2 egg yolks
  • 1 tablespoon sugar
  • Vanilla pod or vanilla sugar
  • 10-15g butter
  • A pinch of brown sugar
  • Citrus fruits of your choice

1. Whisk the egg yolks, heavy cream, milk, sugar and vanilla. Soak the slices of brioche buns in this mixture for 30 minutes.  

2. In a frying pan melt the butter, sprinkle in the brown sugar and allow it to caramelize slightly. Then place the slices of brioche buns and fry on both sides on medium heat.  

3. Serve with slices of citrus fruits. Add your favourite ice cream or whipped cream if desired.

Use the French brioche buns for this recipe. You can either bake them yourselves or buy in the supermarket. If you soak regular white bread or long loaf in the egg-cream-milk mixture for 30 minutes, they will disintegrate.
