Vanilla “hedgehogs” with cottage cheese

Ingredients

FOR THE “HEDGEHOGS”
  • 200g wheat four
  • 100ml water
  • 100ml milk
  • 1 vanilla pod
  • 4g salt
  • 10g sugar

 

FOR THE PLUMS
  • 200g plums
  • 100ml water
  • 100g sugar
  • Cinnamon sticks

 

FOR THE CARAMELISED PUMPKIN SEEDS
  • 50g pumpkin seeds
  • 20g sugar
  • Salt

FOR THE COTTAGE CHEESE
  • 200g full-fat cottage cheese
  • 20g butter

1. Prepare the “hedgehogs”. In a frying pan fry the wheat flour and allow to cool. In a saucepan bring to the boil milk, salt, sugar and vanilla pod.
Strain off the mixture. In a bowl mix the chilled fried flours and hot water and milk mixture together, then knead into a dough. Chill the dough in the fridge and form little “hedgehogs” of your desired size.

2. Prepare the plums. Cut each plump in half and remove the pit. In a pot add the sugar, water and cinnamon sticks and bring to a boil. Add the plums into the boiling syrup and cook for one more minute, then remove from the heat and allow to cool.

3. Prepare the pumpkin seeds. In a dry frying pan toast the seeds. Remove the toasted seeds from the pan, then add the sugar into the same pan. After the sugar is caramelized, add the pumpkin seeds, mix well and season with salt. Pour the caramelized seeds onto a sheet of baking paper and break them into pieces of your desired pieces.

4. Prepare the cheese. Cut it into the desired size and fry in butter.

5. In a pot of boiling water add the “hedgehogs” and cook for 2 minutes. Strain them off. Serve the “hedgehogs” with the fried cheese, plums and caramelized pumpkin seeds. As a garnish, you can use your favourite jam or sour cream.
