Greek style puff pastry basket with raspberries

Ingredients

  • 280 g puff pastry

FOR THE FILLING

FOR THE MASCARPONE CREAM
  • 8 tablespoons mascarpone cheese
  • Pinch of icing sugar
  • Pinch of vanilla sugar
  • 4 tablespoons whipping cream (35% fat)

 

FOR THE MINT POWDER
  • 4 tablespoons white dried biscuit
  • Handful of mint leaves

 

FOR THE GARNISH
  • Fresh raspberries

1. Spread the puff pastry into a desired size baking mold and bake in an oven at 180 ͦC for 10 minutes.

2. Prepare the filling: mix the honey, butter at room temperature and cinnamon until smooth. Add the brown sugar, chopped walnuts and mix well until sugar is dissolved. Pour the filling into the baked puff pastry basket and bake in an oven at 160 ͦC for 20 minutes.

3. Prepare the mascarpone cream. Whip the cream, icing sugar and vanilla sugar until stiff peaks. Carefully mix the mascarpone in. Spread the cream over the top of baked and cooled basket.

4. Prepare the mint powder. Place the white dried biscuit and fresh mint leaves in a food processor and crush well. Spread the green mixture thinly in a baking tin and set aside to dry.

5. Serve the basket with raspberries. Sprinkle the dessert with mint powder.
