BEETROOT AND LEMON GIN TONIC

An interesting cocktail which you need to prepare in advance. However, it is worth trying – it’s unusual method of preparation will surprise your friends.

Ingredients

  • 40ml gin, infused with beetroot and lemon flavours
  • Tonic “Thomas Henry”
  • A pinch of salt
  • 1 sprig of rosemary
  • Ice cubes
  • Beetroot
  • Lemon

1. Just before you start making the cocktail, pour the gin into the special cold brew infuser (usually it is used to make tea or coffee), add the sliced beetroot and lemon and keep in the fridge for 12 hours. Gin will turn bright red and infuse the aromas and flavours of beetroot and lemons.

2. Rim the glass with coarse salt. Put the ice cubes in a glass and pour in the tonic. Then add the infused gin and garnish with sliced beetroot, zest of lemon and rosemary sprig.
