ZABAGLIONE WITH BERRIES

Ingredients

  • 4 egg yolks
  • 50g sugar
  • 40ml dry red wine
  • Your favourite fresh berries
  • Biscuit crumbs

1. Prepare a steam bath. In a medium size pot bring water to a boil and keep it to a light simmer on a low heat.

2. Put the egg yolks and sugar into a heatproof bowl and whisk together until smooth. Then place the bowl into the steam bath and whisk the cream on a maximum speed for about 4 minutes. Slow down the whisking and whilst doing it, within 3 minutes, pour in the wine. The custard should be runny. Remove the bowl from the steam bath and whisk the custard until thickened. Be patient, it will take a while. When it is done, you can squeeze in some lime juice.

3. Serve the dessert with your favourite fresh berries and biscuit crumbs.

Marsala wine is the best option to make this Italian custard dessert.
