Ingredients
- 4 lobsters
FOR THE SAUCE
- 300ml coconut milk
- 1 tablespoon red curry paste
- 1 tablespoon fish sauce
- 4 kaffir lime leaves
- 1 stalk lemon grass
- 1 teaspoon palm sugar
- 2 limes
- Cilantro, mint, basil leaves

1. Cook the lobsters in salted water. 1kg lobster needs to boil for around 12 minutes.
2. Make the sauce. Bring the coconut milk to a boil, add the curry paste, sugar, fish sauce, chopped lemon grass and kaffir lime leaves. Simmer for 20 minutes until the sauce is reduced to half. When the sauce has finished cooking, squeeze in the lime juice. Season with cilantro, mint and basil leaves.
3. Serve the lobster with the sauce. You can offer rice on the side, if desired.
