SHRIMP ROLLS

Ingredients

  • 12 rice-paper sheets
  • 24 shrimps
  • 1 hothouse cucumber
  • 40g glass noodles
  • 1 medium size carrot
  • 1 lime
  • 1 jalapeno pepper
  • 1 tablespoon butter
  • 1 clove garlic
  • Pinch of cilantro

 

FOR THE DIPPING SAUCE
  • 2 tablespoons peanut butter
  • 1 tablespoon hoisin sauce
  • Splash of water

1. Cut the carrot, cucumber and jalapeno pepper into strips.

2. In a pan melt the butter, add the clove of garlic and shrimps. When cooked allow to cool. Then add the chopped cilantro and mix.

3. Make the dipping sauce. Mix the peanut butter with hoisin sauce and a splash of water to the desired consistency.

4. In a bowl of cold water place the rice-paper sheets until softened. Arrange two shrimps and some vegetable strips on each sheet. Squeeze some lime juice on top and fold the sheet into a roll. Enjoy with the dipping sauce.
