DORADO CEVICHE

Ceviche is a world-wide known appetizer of raw fresh fish marinated in lime juice. This time, a new variation of this very popular dish is presented – try it with a mango salsa.

Ingredients

FOR THE FISH CEVICHE
  • 400g dorado fillet
  • ½ red onion
  • 1 fresh jalapeno
  • 1 avocado
  • 30ml lime juice
  • Pinch of lime zest
  • 2 big olives
  • Salt, pepper
  • Olive oil

FOR THE MANGO SALSA
  • 1 mango
  • ½ fresh habanero pepper
  • ½ red onion
  • Fresh cilantro

1. Cut the raw fish, without skin, into thin strips.

2. Prepare the marinade. Place the sliced onion, jalapeno, avocado and chopped olives into a bowl and pour the lime juice over the marinade ingredients. Add the grated lime zest and season with salt and pepper. Cover the strips of fish with this marinade.

3. Prepare the mango salsa. Cut the mango, onion and habanero pepper into small cubes, put into a bowl and sprinkle with chopped cilantro.

4. Place the marinated fish on a plate, garnish with some mango salsa and a few drops of olive oil on top.

You can serve the fish marinated in lime juice immediately or you can leave it to marinade a little longer – the fish will absorb more flavours.
