A simple appetizer which you can prepare in advance. When your guests arrive just place the potato halves into the oven for a few minutes until the cheese has melted.
Ingredients
- 4 big potatoes
- 100g ham
- 100g Cheddar cheese
- 20g cilantro
- 1 teaspoon cumin
- ½ lime
- Chilli flakes
- Salt
1. Bake the whole potatoes in their skins in the oven at 170° C for 1.5 hours. Allow them to cool down and then cut into halves. Scoop out almost all of the potato insides, leaving just a little bit (you can use the potato flesh to make a tasty mashed potato).
2. Cut the ham into small pieces and fry them until crisp.
3. Mix the ham with grated Cheddar cheese, then season with the cilantro, a pinch of chilli flakes, cumin, salt and lime juice.
4. Divide the filling between all the potato halves and sprinkle the tops with some more cheese. Bake them for a short time until the cheese has melted.
